PASTA SALAD WITH FETA YOUNG SPINACHE LEAVES TOMATOES AND OLIVES

Ingredients 

Pasta : penne 400gr, salt.

Dressing : 2 eggs, 1dl unsweetened yoghurt, 1 lime, 1 tablespoon of oil, drops of worcestersauce, 1 tablespoon of strong mustard, pinch of cayenne pepper, 12 slices of bacon thin slices,

The rest of the ingredients: 100 gr of young spinach leaves, 4 tablespoons of pine nuts, 200 gr or a package of Greek feta, 250gr of cherry tomatoes, 100 gr of black olives without pits, pepper and salt.

How to prepare this great salad?

Bring water to the boil and cook the pasta as mentioned on the package, together with a pinch of salt. Once cooked, drain the pasta in a strainer. Rince the pasta with cold water it avoids sticking pasta.Let cool of.

Pre-head the oven to 180°C. Keep one flat tray out of the oven. Put baking paper on the tray. Dress the bacon slices on the tray (make sure there are no bones left in the bacon). Bak de bacon slices until crisp and brown. Once brown and crispy, take them out of the oven and put them on kitchen paper to drain the leftover fat. Let them cool of.

Get a bowl. Split the eggs, only the egg yolks in the bowl. Add one tablespoon of strong mustard, add the juice of half a lime in the bowl. Mix firmly add little by little the oil to the egg mixture untill you have a firm mayonnaise. Season with pepper and salt. Add the yoghurt to the mayonnaise en mix again, not to long just to mix the yoghurt in the mayonnaise. Season again but now with cayenne pepper. Add 2 drops of worcester sauce (optional). Keep the ma-yogho a side.

Rince the spinach leaves en let drain a strainer.

Take a pan add the pine nuts and bake untill light brown. Be carefull and keep an eye on it at all times and stir they burn quickly.

Get a big serving bowl, put the drained pasta in the bowl, crumble the feta cheese and add to the cold pasta. Add the pine nuts to the mixture. Get the cherry tomatoes and cut them in half add to the pasta. To the same with the young spinach leaves. Crumble the bacon and add to the bowl. Once everything is stirred together add two spoons of dressing true the salad. Better less then to much and serve the dressing together with the salad on the table.
